After my short London holiday I wanted to try an English recipe: the scones. I have to confess I tried many recipes before I mixed 3 of them before I had a good result. I want to tell you that there are simple rules to follow for good scones:
- ingredients must be cold. Milk must be very cold. I put it in the freezer before I used it;
- the dough must be kneaded less than possible in order non to warm it. If it necessary leave it for a while in the refrigerator;
- before you cut the dough, fold it in three for a couple of times;
- don’t twist the cutter but cut straight the dough.
That’s all, they are really easy and quick to make. Let’s see how I made them!
Ingredients:
- 250 gr flour;
- 8 gr bicarbonate;
- 4 gr cream tartar;
- 1 pinch salt;
- 30 gr sugar;
- 50 gr very cold butter;
- 125 ml milk.
