This one more than a recipe is a memory of what I was preparing for my children when they went to school. For a few years while they were in high school, they left school at 2 and went directly to training in water polo. The mid-morning snack had to be substantial and I could not give them 2 cookies (even if really rich) nor could I stuff them every day with ham or salami sandwiches. I had to vary as much as possible and one of their favorite sandwiches was this one.
I made it with whole wheat bread, but if you want you can use cereal or white bread.

Ingredients:
- 2 slices of wholemeal bread;
- 1 zucchini;
- 1 mozzarella;
- extra virgin olive oil;
- some mint leaves.
