Only one recipe for 3 different cookies or even more. I really like this dough and it gives me great satisfaction. If I’m waiting for guests, with one recipe only I can make different cookies. The base is a light pastry, and here I propose 3 alternatives: double biscuits stuffed with apricot jam, flavored with coffee or simply sprinkled with icing sugar. If desired, they can be filled with another jam or chocolate cream, or decorated with almond slivers or grated tosted hazelnuts, or simply sprinkled with sugar before baking. Or still decorate them with a veil of jam and fresh fruit: blueberries, strawberries, currants. In short, follow your imagination. In the meantime, I give you the necessary ingredients. A quick tip: the dough contains a lot of butter that with the heat of the hands will tend to melt and make the dough sticky. Keep the dough in the refrigerator until you work it and keep the part that you do not use fresh, and if you should soften it too much, do not use more flour to work it, but put it back in the fridge.
