The 2nd February, we celebrate Candlemas, a festivity with ancient roots. For the Celts it represented the transition from winter to spring with the days are getting longer and the light wins over darkness.
Pope Gelasius at the end of the 400 included it in the list of Christian festivities and matched it with the day of the Purification of Mary (40 days after Christmas) and the presentation of Jesus in the Temple.
Tradition has it that Pope Gelasius offered to the pilgrims who came to Rome for the feast of Candlemas, fried pastry made from milk, eggs and flour; crêpes!
In France for 2 February peope prepare sweet crêpes at home, and invite friends and family member to eat them together.
There are a large number of recipes of crêpes. I propose you mine suitable for salty recipes (like the ones in the picture), as the sweet ones. Once the dough is prepared you can fill them in several ways: with ham, cheese, vegetables, cream, chocolate, fruit, jam or anything that your fantasy suggests.
Ingredients:
- 150 g flour;
- 2 dl milk;
- 1 dl of water;
- 3 eggs;
- 1 pinch of salt;
- 2 and a half tablespoons of melted butter.
Let’s knead:
- in a bowl beat eggs;
- add flour, salt and butter;
- always beating, add slowly water and milk;
- leave the dough in the refrigerator for at least half an hour;
- warm up a pan greased with butter, pour a few tablespoons of mixture and distribute it with a spoon to form a thin sheet;
- fried it on both sides, stuff it as you wish, and then bend it in quarter or roll it .
