Ingredients:
- 100 grams of grated coconut;
- 100 g of sugar;
- 1 egg;
- 1 tablespoon flour;
- few hazelnuts;
- few pine nuts;
- a bit ‘of red sugar paste;
- some chocolates.
Let’s knead!
- in a nonstick pan over low heat toast, for 4 or 5 minutes, the grated coconut;
- place in a bowl coconut, flour, sugar and egg and mix all together;
- to make the bear you need two balls of dough, a larger one for the body and a smaller one for the head. On the smaller stick a very tiny ball to make the nose and pull in the “head” due slices of hazelnut to the ears;
- to make the hedgehog give the dough a form similar to an egg. Insert the pine nuts (cut in half lengthwise) on more than half of the body;
- bake everything at 150 degrees for 10 minutes;
- when the cookies have cooled down, melt some chocolate in a small pan and with the help of a toothpick draw eyes, nose and mouth;
- with a teaspoon put a little ‘chocolate on the bigger ball and stick the head;
- with red sugar paste make thin rolls and pass them around to the bears’ necks to make a scarf and make very tiny balls and stick them on the hedgehog to make the mouth.
If you want to put these cookies in the stocking of the Epiphany it is better to protect them by placing them one by one in a transparent plastic bag, for food. You can find them on http://www.coltelleriagianola.it/home/
