Ingredients:
- 300 grams of flour;
- 80 grams of sugar;
- 2 egg yolks;
- 175 grams of cold butter;
- 50 grams of chopped almonds;
- 50 g chopped pistachios;
- a vanilla bean;
for the icing:
- 70 grams of powdered sugar;
- 1 tbsp of orange juice;
- once cooled roll out the dough 5 mm high and cut in the shape of four-leaf clover;
Let’s knead!
- mix quickly flour with butter cut into pieces, sugar, egg yolks, almonds and pistachios, and the inside of a vanilla bean;
- with the dough form a ball and put it in the refrigerator to cool for about 2 hours;
- once cooled, roll out the dough 5 mm high and cut in the shape of four-leaf clover;
- bake the biscuits at 180 ° for about 10 minutes;
- let the cookies cool down completely;
- prepare the icing by mixing the icing sugar with orange juice;
- with a teaspoon drop the icing on the cookies and sprinkle with pistachios.
It ‘important to put the icing only when the cookies will be completely cold otherwise they risk to break down.
